There were so many great little tents with salsas, cookies, cold brew coffee, eggs, and of course fresh produce. Our favorite part though was how close this small community was. Each person who had a tent knew everyone else and would tell us about who we should go see next and what their favorites were. They were all so welcoming that it made the experience so much more than we expected and now we can’t wait to go back. It felt like the perfect way to kick off what is sure to be a wonderful summer.

Lindsey saw the peaches right away and really wanted to do something on the blog with them and Irecently hadthese apple rose tarts at a local coffee shop that looked delicious. So, I thought how great would it be to do the same thing, but with peaches and bake these fluffy Summertime Peach Rose Tarts.

The sweetness of the peaches and the soft flakiness from the puff pastry is a perfect combination. If you were to add some Blue Bell vanilla ice cream you would be in heaven! (sorry to all of you who live in places that don’t have Blue Bell).

Ingredients:

  • 3-4 Peaches
  • Puff Pastry
  • 1/4 cup melted butter
  • 1/2 cup Powdered Sugar
  • 1/8 cup Sugar
  • 1/2 cup Flour

Directions:

  • Preheat oven to 375 degrees
  • Sprinkle counter with flour and roll out puff pastry on flour until its about 1/4 inch thick.
  • Cut the puff pastry into 3/4 inch strips
  • Cut the peaches in half and thinly slice them
  • Lay the peaches on half of the puff pastry, slightly overlaping them.
  • Sprinkle the peaches with sugar and then brush butter on the puff pastry
  • Fold the bottom of the puff pastry up to create a pocket for the peaches
  • From one end, begin to tightly roll the peaches (sorry there isnt a picture for this but I couldn’t photograph and roll at the same time haha)
  • Spray a muffin pan and place the tarts in the muffin slots
  • Bake for 40 minutes or until the tart begins to brown.
  • Let cool and then sprinkle with powdered sugar.

Valentine’s Dinner Date Recipe: Sweet & SavoryCrepes

What says love better than crepes? I mean they come from France, which it’s capital city is Paris, the city of love. So, if you do the math then crepes are the go-to romantic food for lovers. We also chose crepes, because they are one of our favorite things to eat, you can customize them however you want, and it is also something that you probably don’t make everyday!

Ingredients to make the Crepes:

  • 2 Eggs
  • 2 Cups of Milk
  • 1 teaspoon of vanilla extract
  • 1 cup of flour ( I used Simple Truth from Kroger)
  • 1 tsp Salt
  • 1 tbsp Butter
  • 2 tbsp Sugar ( I used Simple Truth from Kroger)

*We bought all of our ingredients for the crepes fromKroger.

Directions:

  • Mix all of the ingredients into a blender and mix well.
  • Pour mix into bowl and let it sit for a few minutes.
  • While mix is setting, heat up a frying pan on low-medium heat.
  • Spray with cooking spray or oil.
  • Pour 1/2 to 3/4 of a cup of mix into the pan and swirl the pan to coat it evenly with the crepe mix.
  • Let the crepe cook until the edges are golden brown.
  • Using a very thin spatula get under the crepe and flip over, continue to cook for another minute.
  • Remove from heat and repeat for as many crepes as you would like.

California Style Crepe:

  • Turkey Deli Meat
  • Bacon
  • Cherry Tomatoes
  • Avocado
  • Spring Mix
  • Monterey Jack Cheese

You just layer all the ingredients onto the bottom half of the crepe. Then fold the top half towards you and then fold one more time, till it makes a triangle.

Strawberry & NutellaCrepe:

  • Kroger Chocolate Syrup
  • Nutella
  • Fresh Strawberries
  • Whip cream ( optional)

Spread nutella on the bottom half of the crepe. Then add sliced strawberries. Fold the top half of the crepe towards you and then fold it one more time to make a triangle. Then drizzle the Kroger Chocolate syrup over the crepe and add strawberries and whip cream.

This crepe is one of my favorites, because it is so simple to make and only needs a couple ingredients!

I have to take a quick second to brag on my hubby! He surprised me and picked up these beautiful pink roses from the Kroger floral shop! He knows how much I love fresh flowerson the table at home.


Little disclaimer – crepes take team work if you have not made them before! It took both of us to flip the crepes haha! Which, honestly made it so much fun! We did have a few “flips” that did not go so well, but luckily we were in no hurry and just kept at it until we got it right. Ingredients
  1. 2 sticks (8 oz.) unsalted butter, softened
  2. ½ cup white sugar
  3. 1¼ cup light brown sugar, packed
  4. 2 eggs
  5. 2 teaspoons vanilla extract
  6. 2½ cups all-purpose flour
  7. 1 cup graham cracker crumbs (see notes)
  8. 1½ teaspoons baking soda
  9. ¾ teaspoon salt
  10. 1 cup mini semi-sweet chocolate chips
  11. 1 cup mini Jet Puffed Mallow Bits
  12. 1 Hershey’s bar, broken up
Instructions
  1. Set your oven to Broil.
  2. Using a foil lined cookie sheet, place your 1 cup of marshmallows in the oven. Make sure to spread them out and key an eye on them. You just want to lightly brown the tops. Set aside.
  3. Preheat the oven to 350ºF.
  4. Cream the butter and both the white and brown sugars until light and fluffy.
  5. Continue mixing while adding the eggs one at time. Make sure each egg is incorporated before adding the next.
  6. Add the vanilla.
  7. Scrape down the bowl with a spatula to make sure that you mix all of the goodness together.
  8. Combine the flour, graham cracker crumbs, baking soda, and salt in a separate bowl. Whisk to combine.
  9. Place the butter and sugars mixture into a mixing machine bowl.
  10. With the machine on low, slowly add the flour mixture. Mix until just combined.
  11. Remove from the machine and with a spatula fold in the mini chocolate chips and marshmallows.
  12. Use a cookie scoop to make your cookies a uniformed size.
  13. Thin them out as you drop cookies onto a SILPAT baking sheet. (see notes)
  14. Before you place the cookies into the oven, add broken up pieces of the Hershey's bar, broken up graham cracker, and addition mini mallows.
  15. Bake for 10 minutes. They should be lightly golden on the outside but still look gooey on the inside.
For the graham crackers
  1. Place 6-8 graham crackers in a ziplock bag and crush them until they are very fine crumbs. Also be sure to save a few graham crackers for toppings later.
For the cookies shape
  1. I formed them into a smaller version of what I wanted them to end up looking like, they spread out once they cooked but this also game me room to add my toppings.

Ingredients
  1. 4 sweet potatoes
  2. 1tbsp olive oil
  3. 1/4 cup brown sugar
  4. 1/4 cup melted butter
  5. 1 tsp cinnamon
  6. pinch of nutmeg
  7. 1/4 cup honey
  8. 4 cups of mini marshmallows
  9. ****Optional**** 1/4 cup of chopped pecans
Instructions
  1. Preheat oven to 400.
  2. Rub potatoes with olive oil and place on a foil lined cooking sheet.
  3. Poke all the potatoes many times with a fork and then place the pan in the oven for 50 min., or until tender.
  4. Remove from oven and let cool for 10 min.
  5. Cut each potato in half and then scoop out the middle. Make sure to leave a small ring of potato around the edges so the skin keeps its shape.
  6. Place what you scooped out into a bowl and put remaining halves back on the cooking sheet.
  7. In the bowl add brown sugar, melted butter, cinnamon, honey and nutmeg. Mix all the ingredients until smooth.
  8. Spoon the mixture back into the potato halves.
  9. Place the potatoes back in the oven at 400 degrees for 10 min. then remove.
  10. Set oven to broil.
  11. Add mini marshmallows to the top of each potato.
  12. Place potatoes back in the oven under the broiler for 1-2 minutes but carefully watch to make sure that the marshmallows don't burn. Remove once the marshmallows are melted and lightly brown.
  13. Ready to serve.
Notes
  1. If you do burn the marshmallows, don't worry, just pull the potatoes out and remove the marshmallows off the top with a spoon and try again.

For the Waffles
  1. Eggo Mini Waffles
  2. Syrup
For the Chicken
  1. 1/2 cup vegetable oil
  2. 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  3. 1 cup Panko bread crumbs
  4. 1/2 teaspoon paprika
  5. 1/2 cup all-purpose flour
  6. 2 large eggs, beaten
  7. Salt and Pepper
For the Waffles
  1. Follow the instructions on the box
For the Chicken
  1. Heat vegetable oil in a large skillet over medium high heat.
  2. Season chicken with salt and pepper, to taste.
  3. In a large bowl, combine panko and paprika; season with salt and pepper, to taste. Set aside.
  4. Working in batches, dredge chicken in flour, dip into eggs, then dredge in panko mixture, pressing to coat.
  5. Add chicken to the skillet, 5 or 6 at a time, and cook until evenly golden and crispy, about 4 minutes. Transfer to a paper towel-lined plate.
Assembly
  1. Take two of the waffles and sandwich a piece of chicken between them then slide a toothpick through the center to hold it together and drizzle syrup on top.
Notes
  1. Serve immediately or the waffles with begin to get soggy.
